2015 Cabernet Sauvignon
The warmest growing year on record- 2015. Early bud break, early fruit set, early veraison, early harvest. We rushed back from salmon fishing in western Alaska, loaded the bins on the trailer and drove straight to Seven Hills to pick merlot. After that it just kept coming for eight weeks.
Wonderful ripe flavors were achieved at our leisure in what I remember as the easiest harvest ever. Cabernet Sauvignon from the nine different sites fell into the winery like dominoes. Very predictable…. Ideal sugars, acids, and pH. The resulting 2015 classic blend is a wonderful fruit complexity highlighted by violets, cassis, anise, and perfectly refined tannins. We were particular to make it lean enough in a very ripe year to insure its age-ability—always the ultimate goal. Drink it when you will!
Hand-picked grapes, simple crush, cold-soak for 3 days,
ferment for another 18 at cool temperatures, hand-punch 3 times a day,
hand-press on a wooden basket press.
